Pulled Pork Barbeque...with a sweet, secret ingredient!

I get this sense of accomplishment when I create a recipe and it turns out good...well in this case, really good. I guess that's why I love cooking so much.

For this barbeque recipe you will need a large crockpot and about 8 hours of cooking time. (perfect recipe to throw in the crock pot before work)

Crockpot Pulled Pork Ingredients

One 2/3 pound pork butt (aka: pork shoulder)
One medium onion
1/4 cup (or a little less) of seasoned salt
1 tsp garlic powder
1/2 tsp of cayenne pepper
3 tbsp of Worcestershire sauce
24 oz of Dr. Pepper (trust me)
and a little black pepper

Okay, first, you will make a dry rub. Combine the seasoned salt, garlic powder, and cayenne pepper in a bowl. Once the seasonings are combined sprinkle the pork butt with the seasoning and give it a good rub. You want the whole piece of meat to be covered in the seasoning.

Now, turn your crock pot on low. Peel the onion and cut it in half, then cut those pieces in half. Place the onions in the bottom of the crock pot. Place the seasoned pork on top of the onions. Next, add the Worcestershire sauce on top of the pork and sprinkle with a little bit of black pepper.

Now, for the "sweet, secret ingredient"....Dr. Pepper! Poor 24 oz of Dr. Pepper over the pork. Place the lid on and let it cook on low for about 8 hours.

After 8 hours, check the pork. If you pick the pork up and it doesn't fall apart, it isn't ready. The pork should be VERY tender!

Once you remove the pork from the crock pot just take two forks and pull it apart. Again, this should be very easy because the pork should just fall right apart, if not, cook longer.

Serve as is or on a sandwich...or however you like pulled pork :)

For the barbeque sauce I just combined some of the liquid from the crock pot with my favorite bbq sauce until I got the right consistency that I wanted...it's all in how you like it. Let me know what you think!!

My First Post!

Happy Valentine's Day! My office is closed for the second day in a row (SO RARE!) because of the snow so I figured I would start a food blog to try and cure this boredom. I figured what better recipe to start with than some yummy potato soup to warm you up on this cold, snowy day?!

My goal is to post one recipe a week. Now, I don't even know if anyone is going to read this or not, but I enjoy writing and cooking so, here we go.

Creamy Potato Soup

1 pound bacon, roughly chopped
1/4 cup diced onion
1 large carrot, peeled and diced (optional)
1/2 cup diced celery (or more if you like)
6-8 large Russet potatoes, peeled and diced (soak in cold water to keep them from turning brown and this will also get rid of some of the starch)
1/4 cup flour
3 cups chicken broth
Salt and pepper, to taste
4 cups heavy whipping cream

And your choice of toppings (cheese is a must!)
  1. In large pot, cook the bacon until crispy.
  2. Remove bacon and drain on paper towels, reserving half for later (topping). In bacon grease, cook onions, carrots, and celery until the onions are translucent.
  3. Whisk in flour to make a rue, stir constantly over low heat until the flour is cooked and the mixture has thickened slightly. Add potatoes and cook for a few minutes, stirring occasionally.   Add chicken stock and half of the bacon. Season with salt and pepper.

    4. Over medium-high heat, bring the soup to a simmer and cook for 25 minutes or until the potatoes are soft. Mash some of the potatoes for a creamier texture. Add whipping cream and simmer for 5 minutes.
    5. Adjust thickness by adding water or broth. Soup should have a creamy consistency.

    6. Season to taste, and garnish with toppings.
Let me know what you think and ENJOY! :)
